Stuffed Mackerel with Roasted Mediterranean Vegetables
It is one of the best meals that you can prepare in the middle of the week. As your week unfolds, you likely become busier with work or education activities and, therefore, need a meal that will re-energise you. Stuffed Mackerel with roasted Mediterranean vegetables is healthy, attractive, and tasty.
Preparing the roasted vegetables by placing them in a bowl. Add sprigs of thyme, enough olive oil, and seasoning and mix them well so that the vegetables will be well coated. Transfer the contents in the bowl to the AGA shallow baking tray and line it with a piece of baking liner.
Slide the tin into the lowest set of runners in the roasting oven. Cook your items for about 30 minutes or alternatively until you see the vegetables have become tender and began turning brown at the edges. As you do all this, ensure that you turn the vegetables occasionally.
Put lemon slides, parsley, and funnel into the cavities of the mackerel and score at least three times on each side. Place it on the large grill rack in the AGA roasting tin and ensure it is on a high position.
Grill your mackerel for approximately 8 minutes. Turn it over to the other side and cook for another 5-8 minutes. The time you spend cooking the second side of the mackerel will depend on its thickness. The thicker it is; the more time it will need to prepare.
Your food is now ready and you can serve the mackerel accompanied by the roasted vegetables. Importantly, as you prepare the meal, make sure you turn on the oven vent fan to ensure that you keep any cooking odours and fat splashes at the minimum.
